Good Friday eating

Traditional hot cross buns

MAKES 16 PREP+COOK TIME 1 HOUR 30 MINUTES (+ STANDING + COOLING)

4 teaspoons (14g) dried yeast

1/4 cup (55g) caster sugar

1 1/2 cups (375ml) warm milk

4 cups (600g) plain flour

2 teaspoons mixed spice

1 teaspoon ground cinnamon

60g butter

1 egg

1 1/2 cups (240g) sultanas

FLOUR PASTE

1/2 cup (75g) plain flour

2 teaspoons caster sugar

GLAZE

2 tablespoon caster sugar 1 teaspoon gelatine

1 Combine yeast, sugar and milk in a small bowl. Cover; stand in a warm place for 10 minutes or until mixture is frothy.
