1 teaspoon ground cumin 1 clove garlic, crushed 2 tablespoons lemon or lime juice 2 tablespoons extra virgin olive oil â…“ cup firmly packed fresh coriander leaves

PICK YOUR PROTEIN

400g can chickpeas, black beans, brown lentils or kidney beans, drained, rinsed

1 Process cumin, garlic, lemon juice, oil and coriander in a small food processor until smooth. Add dressing to vegan protein of choice; toss gently to combine. Use as the base for one of the nourishing bowl variations opposite.
