Dimple Yuen, cofounder and head distiller of Two Moon Distillery, peers into the pot of “Luna,” their 100-liter copper still. Custom-designed and handhammered in Germany, Luna’s unique design features a moon-like – hence its name – spherical helmet that sits above the pot and provides a very large copper surface area to interact with alcohol vapors to produce a cleaner, more refined spirit.

In this issue, Cloud Kingdom , we travel to a place where the air is thin but the culture is rich – the endlessly inspiring destination of Nepal. 

Kathmandu is only the start of our journey. From there we take two more flights – in progressively smaller planes – to reach an area called Lower Mustang, home to the famous Annapurna massif and the surrounding Annapurna Circuit hiking trek. Our home for the week is an ambitious new hotel there that blends into the mountainous terrain and provides a safe haven from which to launch a series of Himalayan excursions.

Our theme, woven throughout the issue, is a celebration of our planet’s generous and nourishing bounty. Three cover stories span the globe to survey a profusion of wonderful things to eat from sea, land, and soil. TK54’s evocative title, Forests Blue , is suggested by our featured travel destination, Japan’s Aomori Prefecture, whose name translates as “blue forest.”

Over its seven-year run, the restaurant had achieved worldwide fame, rising to number two on the list of Asia’s 50 Best. To cover in depth the finale of such a groundbreaking icon, TK joined Restaurant André for its last week of service and has made it the theme of this issue, Last Dance.

In this issue, we take a deep look into the creative process of one chef, Vicky Lau, founder of Tate Dining Room & Bar and of her recently opened Poem Patisserie.

The seed for Nordic Odyssey was planted more than two years ago, when, during a dinner at FINDS restaurant, Executive Chef Jaakko Sorsa took us on a culinary tour of his homeland. There were diver scallops from Norway, wild game pâté with rowanberry jelly from Finland, Venison Rydberg from Sweden, open-faced smørrebrøds from Denmark, smoked mackerel from Iceland, and Lapland pancakes covered with cloudberry and lingonberry. Behind each dish was a tradition and a story: how the fish are caught, how the game is hunted, how the fruits are preserved. I tried to imagine what it would be like to go to all of these places with Jaakko as our guide and capture for our readers the beauty of the people and the landscape and the cuisine.
