There’s something irresistible about this classic dessert, but these luscious variations add some health benefits to the original.
4 Banana Splits

CHUNKY MONKEY

PREP + COOK TIME 20 MINUTES (+ REFRIGERATION) SERVES 2

Place 400ml can coconut cream, 1 cup coconut sugar and ¾ cup smooth natural peanut butter in a saucepan over medium heat; stir until sugar dissolves. Bring to a simmer; cook, stirring frequently, for 10 minutes or until mixture thickens to a caramel consistency. Divide 2 bananas, halved lengthways, between two long glass dishes; top with 4 scoops vegan (or regular) chocolate ice-cream and generous spoonfuls of peanut sauce. Top splits with 2 tablespoons chopped salted roasted peanuts and ¼ cup popcorn.
