The Rise of Natural Food Colors: A Comprehensive Exploration
Natural food colors are pigments derived from natural sources such as fruits, vegetables, plants, and minerals. They are widely used in the food and beverages industry by manufacturers to add color to food items or drinks. These natural food colors are available in liquid and powdered forms in the market. Food quality is evaluated on the basis of the color of the food. Food color does not always mean that the ingredients are organic, however, in a few cases, it refers to a lesser amount of ingredients used in it. The less ingredients added, the more natural the food product is. Thus, consumers demand natural and organic ingredients in food colors for a better lifestyle and to minimize the risk of diseases that are caused due to artificial food colors. Natural food colors are generally considered to be safer and healthier than synthetic food colors, which are made from chemicals. They are also more appealing to consumers who are looking for natural and clean-label products, thus creating a huge natural food colors market demand and food manufacturers are intensively capitalizing on new products development and technological advancements to cater to the demand.

Influence of Processing Techniques on the Nutritional Content of Millets
Millet is a collection of small-seeded cereals and the oldest plant in the world cultivated by humans. It is one of the cereal grains that is commonly consumed, especially in the dry and semi-arid regions of Africa and Asia. It is a crop that is very nutrient-dense and contains significant levels of minerals and vitamins. Additionally, they are an excellent source of protein, energy, dietary fiber, resistant starch, and slowly digesting starch. The common reason for the limited usage of millets is an antinutritional component found in the grain. They are often processed before consumption using methods like decorticating, malting, fermenting, roasting, flaking, and grinding to eliminate antinutrients and improve their palatability, nutritional value, and sensory qualities (Saleh et al., 2013a).

Bioplastics From Microalgae
The environmental challenges generated by the consumption of plastics are huge mainly due to their long degradation. It takes almost up to 1200 years for certain plastics. The environmental challenges and the longer degradation time of conventional plastics can be solved using bioplastics. According to European Bioplastics (2021), the global market for bioplastics is expected to increase from 2.4 million tonnes to 7.6 million tonnes by 2026. Even though, bio-plastics can be produced from sources such as plants, animals or microbial biomass, microorganic sources, mainly microalgae-based bio-plastics are emerging as the highly preferred source. This is due to their ease of cultivation (growth even in polluted surroundings like wastewater), fewer nutrient demands, fast- growing nature, high productivity etc. Unlike other bioplastic sources, microalgal sources do not compromise human consumption.
