When Ida Bagus Gotama decided to built a professional arak and brem distillery, his decision was partly fuelled by his growing concern over the uncontrollable quality of illegal home distilleries. For Gotama, the tradition of rice fermentation is a time-honoured craft to be celebrated. The rice wine is an inseparable part of the offering in religious ceremonies, a libation for the gods who provide the island with an abundance of rice.
