खुम्बी एक पौष्टिक आहार है जिसमें प्रोटीन, खनिज लवण तथा विटामिन जैसे पोषक पदार्थ पर्याप्त मात्रा में पाए जाते हैं। खुम्बी में वसा की मात्रा कम होने के कारण यह हृदय रोगियों तथा कार्बोहाईड्रेट की कम मात्रा होने के कारण मधुमेह के रोगियों के लिए अच्छा आहार है। खुम्बी एक प्रकार की फफूंद होती है। इसमें क्लोरोफिल नहीं होता और इसको सीधी धूप की भी जरूरत नहीं होती बल्कि इसे बारिश और धूप से बचाकर किसी मकान या झोंपड़ी की छत के नीचे उगाया जाता है जिसमें हवा का उचित आगमन हो।
