Kale is one of the most nutritious vegies. It’s particularly rich in carotenoids which can be converted to vitamin A in the body. A single cup of kale provides you with over 200% of your daily recommended amount of vitamin A. Kale is one of the best sources of the carotenoids lutein and zeaxanthin. These are known to play an essential role in eye health. A high dietary intake is associated with a reduced risk of age-related macular degeneration and cataracts. Kale is also a terrific source of vitamin C, vitamin K, vitamin B6, calcium, potassium, copper and manganese, and supplies good levels of several B group vitamins including folate, iron, magnesium and phosphorus.
