PREP + COOK TIME 10 MINUTES SERVES 4
Heat 1 teaspoon vegetable oil in a large wok over high heat. Pour 2 lightly beaten eggs into the wok; swirl until set. Remove from wok; slice omelette. Heat 1 tablespoon extra oil in wok; stir-fry sliced red capsicum, 1 sliced red onion, 2 cups shredded cabbage and 1 crushed clove garlic for 3 minutes or until softened. Add 600g sliced leftover ham, turkey or chicken, half the egg, 2 x 250g packs 90-second microwave basmati rice, 1 teaspoon sesame oil and 2 tablespoons each soy sauce and sweet chilli sauce; stir-fry until hot. Top with remaining egg. Serve with sweet chilli sauce, coriander and sliced green onion.
